The wine has a deep dark color with a subtle garnet shimmer.
The nose is complex and seductive, with notes of black cherries, wild berries and menthol, complemented by dark chocolate, spices and coffee.
The attack is open, revealing a fleshy and expressive wine, carried by enveloping tannins and a delicious acidity. With freshness and refinement, it builds to a crescendo, offering exquisite tertiary aromas of cardamom and truffle. The finish is long and persistent, a magnificent Pauillac wine that is still young and alive.

Château Pichon Baron 2008 goes well with a veal shank from Corrèze with Bresse butter, a saddle of lamb in a herb crust, a roast duck in a sesame crust, a rabbit à la royale or simply a tomahawk beef fillet.
For dessert it tastes particularly good with a dark chocolate cake.
